Ingredients
  

  • 200 g Quinoa Substitutes: Millet (a similar grain that is also gluten-free and gentle on the stomach), Buckwheat (another gluten-free option, ensure it's well-cooked to make it more digestible)
  • 2 cups Water
  • 1 tbsp Olive oil Substitutes: Sesame Oil, Coconut Oil (ensure it's virgin and cold-pressed)
  • 1 Cucumber Substitutes: Zucchini (a similar texture and also gentle on the stomach), Green beans (cooked until soft for easier digestion)
  • 1 Carrot Substitutes: Pumpkin (a sweet and soft alternative when cooked), Squash (gentle and easy to digest when also cooked)
  • 1/4 cup Fresh parsley Substitutes: Sweet potato (cooked or boiled until soft and easy to digest), Pumpkin (cooked or boiled)
  • 1/4 cup Fresh coriander Substitutes: Fresh Basil (if tolerated, for a different but gentle flavor), Fresh Thyme (for a mild herby touch), or simply Fresh Dill
  • 1/4 tsp Salt Substitutes: Himalayan Salt

Instructions
 

  • Rinse the quinoa under cold water until the water runs clear.
    Rinsing quinoa in a glass bowl under a stream of water.
  • In a medium saucepan, bring 2 cups of water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes or until water is absorbed.

  • While the quinoa is cooking, dice 1 carrot and slice 1 whole cucumber.

  • Finely chop 1/4 cup of fresh parsley and 1/4 cup of fresh coriander to mix into the salad later.

  • Mix together 1 tablespoon of olive oil (you can use 2-3 tablespoons if you are not in the middle of the flare-up) with 1/4 teaspoon of salt in a small bowl.

  • Once the quinoa is done, fluff it with a fork and let it cool for a bit. Then, in a large bowl, mix the quinoa with the diced carrots, cucumber, and fresh herbs.

  • Drizzle the olive oil dressing over the salad and toss until everything is evenly coated.
